In the last year I have realized that I can handle very small amounts of gluten in my diet.  It is basically best if I just stay away from it all together.  That means cooking and buying differently than I did before.  Erica Kerwien’s cookbook Cooking for the Specific Carbohydrate Diet (SCD) has helped immensely!  Her idea is that you can cook regular food that tastes great and keeps  you feeling good.  All the recipes in the book can be made for those with celiac disease, Crohn’s disease, IBS, ulcerative colitis or other digestive issues.

I like to bake and many times I can’t find recipes online without a lot of trial and error that can be made easily and doesn’t take a lot of ingredients.  I end up spending $40 just to make muffins. It’s a bit maddening. The banana bread recipe can be made into muffins and are super moist and taste really good.  My kids ask for them all the time now.  The crepes are not the same but my family still liked them.   Cooking for the Specific Carbohydrate Diet ($15.95) provides over 100 belly-friendly recipes including:

• Blueberry Coffee Cake
• Cinnamon Raisin Bread
•Quiche
• Pizza
• Chicken Pot Pie
• Dirty Rice
• Butter Biscuits

Kerwien is a kitchen chemist, writer, and tech industry veteran. One of her sons has an autoimmune disease called Crohn’s disease and she wanted to help him feel his best and be his healthiest.  She started the Comfy Belly website (comfybelly.com) to track and share recipes.  Now this cookbook offers the best of this collection of gluten-free, sugar-free, lactose-free, dairy-free, and grain-free tasty treats, meals, fabulous sides and even birthday cake.

I find myself using this cookbook at least once a week and now use it as a guide to cook other gluten-free foods that are also sugar-free.

You can purchase the cookbook on Amazon.com.
